Green Makes & Bakes. Zero snakes.
For St. Paddy's, we're gonna party like... we just drove all the snakes out of Ireland???
Let me see if I’ve got this straight. Legend has it that Saint Patrick got attacked by snakes while he was fasting for 40 days.
In retaliation, he drove them all into the sea by chasing after them with a drum. (That must have been one sick beat.)
I have thoughts.
#1 As a drummer, I appreciate that percussion instruments take such a prominent role in church allegory despite (grievance alert) them NOT being welcome in the traditional Baptist church I was raised in. I mean, you got the little drummer boy out here putting mustard on the beat beside the manger, but not THIS little drummer boy. No sir!
#2 Forgive my irreverence, but just MAYBE if you got attacked by like, ALL the snakes in a country while fasting, that’s a sign that you should not be fasting right then or right there… just sayin.
Anyways, thanks to the recipes here in this week’s roundup, you can celebrate St. Paddy’s in all it’s green Irish glory, and you can rest assured that you will NOT be attacked by all the snakes! (what a segue)
Slow Cooker Corned Beef and Sauerkraut
This traditional one pot meal is SUPER easy to prep and yields tender flavorful beef that you’ll be using all week long. Includes carrots and potatoes as well!
Guinness Beef Stew
Sauteed bacon and a Guinness beer broth give this beef stew an ultimate savory richness.
Puff Pastry Guinness Beef Pot Pie
No worries here about a soggy bottom crust, because there isn’t any! We took the incredible beef stew recipe above, and topped it with an egg-washed freezer puff pastry for a pot pie that looks, sounds, and tastes AMAZING, but requires zero pie crust skills.
Slow Cooker Reuben Dip
Use leftover corned beef from our first recipe above, or store bought from the deli. Either way, this dip packs everything you love about a Reuben into a shareable game day classic. This recipe is low-key one of my favorites.
Reuben Pull Apart Bread
This recipe is how you feature your favorite toasty rye bread and transform a melty Reuben into a party-ready finger food.
Green Pea Soup
This green goodness is made with savory sweet candied bacon and finished with fresh herbs and a splash of cream. We use frozen peas so you can make it year round!
Bailey’s Irish Coffee
What to say? It’s my #1 favorite beverage + my #14 favorite beverage combined with my #2 favorite frothed milk! (Goat milk is actually quite nutritious. No, I will not take that out of the newsletter, it stays.)
Matcha Lattes (Hot or Iced)
If the booze or coffee isn’t your thing, you can go smooth and easy with these Matcha Lattes. These earthy sweet drinks are as easy to make as any coffee, but with a decidedly more appealing color. Whisking matcha feels like participating in a very zen ritual, so if that’s not the vibe of your St Paddy’s, just offset by blasting some Dropkick Murphys at full volume.
Lucky Charms Treats
Not sure if the Irish exactly claim Lucky Charms as a national symbol, but cartoon leprechauns aside, the kids (and adults) stuffing these gooey delicious treats into their mouths won’t care a bit because they’re magically delicious.
Mint Oreo Chocolate Chip Cookies
If you’re more of a “Shamrock Shake” level of St. Paddy’s participant, then these cookies are for you.
What are your go to recipes for St. Patrick’s Day? Something we missed, or a favorite that MUST be included? Better yet, got any fun shareable St. Patrick’s Day memories to share? Tell us about it in the comments!
I’ll go first.
Happy St. Patrick’s Day!
Being the "artist" that I am... (pauses for dramatic effect) I had this great idea for a tattoo on the BACK of my hand (prime location BTW), of a hand holding a paintbrush, and painting a Celtic cross.
It's like tattoo inception... or a cry for help from a kid who just should have been allowed to put a few of their hobbies on a class ring or letterman jacket or something...
Now, before you cringe so hard that you crack a molar, IN MY DEFENSE
in the early oughts, Irish/Celtic heritage was having a cultural moment (*see River dance, Celtic Women, The Corrs, influences throughout LOTR and many other popular movies...)
and though my particular design would have been regrettable now, it was nothing if not original (unlike the tribal barbed wire nonsense that was commonplace at the time).
Now that I'm older and wiser though, I'm just thinking your face, on the left pectoral (a la "Date Night" movie).
We’re gonna need more information about that sketch immediately.
