It’s October, and as summer sweetness gives way to the savory comfort of shareable large batch potluck meals, casseroles, and slow cooker favorites, this month’s meals are embracing the chaos of busier schedules by providing more quick easy recipes that fit into a more predictable routine.

Wednesday: Sheet Pan Pesto Chicken and Vegetables

It takes about 20 minutes of prep to get this sheet pan meal into the oven, but you are richly rewarded with a meat and potatoes and veggies meal that’s comforting, heart-warming, and really saves you time since you won’t have to make any sides (and the dirty dishes cleanup is minimal). That’s a thumbs up in my book.

Summer salads get all the love, but THIS healthy beauty brings the best that Fall has to offer, combining some incredible seasonal flavors and textures.

Friday: Apple Cinnamon Pancakes

Let “Brinner” this week be blessed by that trip to the apple orchard. We add some cinnamon flavor to our fluffy buttermilk pancakes, and top a stack of these flapjacks with some pie apples and an easy homemade cider syrup. MMMMM!
