Last night, my son broke down in tears before bed. It had been a long week, filled with good things, but filled nonetheless, and as he caught his breath between the tears, he told us “it just feels like one thing after another. There’s no time to just chill.”
Phew, can I ever relate. May is a month of one thing after another, a sprint to summer filled with musical performances and award ceremonies and field days and teacher appreciation and on and on it goes. It can be tough to catch your breath.
I hope this meal plan can take one thing off your (figurative) plate, and when dinner is just “one more thing,” I hope you order take out.

Monday: Cast Iron Skillet Chicken Breast
I shared in our last Snack Chats that I finally learned how to cook goood chicken breast. Roast some veggies (I recommend this roasted carrot salad or roasted zucchini and peppers)while the chicken cooks for an easy dinner. Make an extra piece of chicken to have with the Chicken Bacon Salad later this week!
Tuesday: Crock Pot Barbacoa Tacos
You gotta love when Cinco de Mayo falls on Taco Tuesday! This crock pot barbacoa makes enough for a party so invite some friends to join you! Save the juices to make the Mexican Stew on Thursday.
Wednesday: Chicken Bacon Ranch Wraps
You can’t go wrong with this combo. Fry up some bacon to go with the leftover chicken and you’ll have an easy delicious dinner in less than 30 minutes. If your kids are iffy about wraps, you can also serve these deconstructed. Ours love eating their plain tortilla, bacon strips, cheese, and lettuce. 🤷🏻♀️
Thursday: Mexican Beef Stew
You can thank the leftover barbacoa juices for giving this stew the richest, savoriest broth. Filled with potatoes and corn and topped with avocado and fresh lime juice, this feels comforting and fresh at the same time.
Friday: Creamy Shrimp Pappardelle
Finish the week with a restaurant style pasta dish you can easily create at home. Silky, creamy, and finished with fresh basil, it’s a lovely way to finish the week.
