Guess what?
May is in my top 2 most stressful months because as the school year starts winding down, all of the celebrations/lunch on the lawns/teacher appreciations/field days are winding up. It’s a 40-car-pile-up of social events, just as the weather is BEGGING us to finally go outside in flip flops, touch grass, and tune up that farmers tan.
NSYNC memes and anxiety-inducing calendars aside, this May we’re starting you off with the smoothest and simplest week of meals we could think of.
Without realizing it until right now, 3 out of this week’s 5 meals feature Parmesan cheese. So… if you don’t already buy the chock block sized wedge of the stuff from Costco, I guess put that on your next grocery list.
(*Side note: Lots of folks buy a side of beef and pack a freezer in their garage with the stuff, but I’ve never heard of a freedom-loving individual importing a whole wheel of Parmesan, and I’m thinking that’s gotta change.) Moving on.

Now on to this week’s meals!!!
Monday: Shortcut Crispy Chicken Caesar Salad
What’s the easiest meal you can throw together that isn’t cereal? This salad.
Now I wouldn’t hold it against you if you bought separate ingredients, mixed up your own homemade creamy Caesar dressing, or even used some “on-its-way-to-going-stale” bread to make your own air fryer croutons from scratch, but let’s be real. It’s Monday, and we’ve all seen the train wreck that is the calendar. Go easy on this one.
Tuesday: 30 Min Pantry Pasta
A can of evaporated milk + a packet of Italian dressing seasoning mix takes all of the guess work out of cooking up this flavorful creamy sauce. You can sub in just about any veggies or proteins you’ve got around. We like imitation krab meat (don’t judge us), cherry tomatoes, and zucchini, but also love it with bacon, onions, and mushrooms.
Wednesday: Slow Cooker Pulled Pork Sandwiches
Let the crock pot do its magic and you’ll be richly rewarded with a tender pulled pork that’s sweet, a little spicy, and pairs perfectly with our sweet and sour no mayo coleslaw. This pork is so much better than that 1-dimensional dry salty stringy mess they sell pre-packed… (*side note: “1-dimensional dry salty stringy mess” sounds like a sick burn from a catty reality show.)
Be sure that you make enough of this pork so that you can save some leftovers for…
Thursday: 20 Min Pulled Pork Rice Bowls
This meal is mostly just assembly. Boil some rice, skillet some peppers, and you’re off to the races. Combining your favorite fresh ingredients and maybe a drizzle of our avocado lime dressing and these yummy rice bowls are ready to win hearts.
If these rice bowls aren’t quite your speed, you could instead use the leftover pulled pork in this delicious Mac and Cheese.
Friday: 30 Min Ground Beef and Vegetable Soup
Phew! It’s been 2 looong days since we piled shredded Parmesan cheese on top of anything for dinner. Thank goodness we’re closing the week out with this easy stovetop veggie and ground beef soup.
This one pot wonder is one of our favorites because it makes a hearty meal, has a wonderful herby savory broth that gets a big hit of flavor from balsamic vinegar, and it makes fantastic leftovers.
