February is over (praise hands). The shortest month may be our least favorite weather-wise but thanks to a few highlights here right at the tail end, I’m feeling cautiously optimistic for March. Still, it’s rude that we have to wait another full month for spring break.
I am aching for it to be grilling weather again. I’d settle for just ONE of my favorite fruits or veggies to be in season… (perturbed grunt) Until then, I’m wringing as much out of this winter as I can with these savory staples and some fresh, albeit off-season ingredients.

Crock Pot Shredded Beef
We’re starting our month with our favorite fall-apart tender roast. Though it’s fantastic on some egg noodles (as shown), we’re going with our favorite instant mashed potatoes, and saving the noodles for tomorrow night’s meal…
30 Min Beef Ramen Stir Fry
Next, we’re jazzing up those shredded beef leftovers with some stir fried veggies, and a sweet and savory ginger soy and rice vinegar sauce. A couple packages of ramen noodles make this delicious meal fun to slurp for the whole family.
1905 Salad with Garlic Dressing
You can forget about the kids liking this one. But this isn’t for them any how. Just roll up some ham and cheese in a sandwich wrap for them, and make this salad for you. Using deli (or leftover) ham, slivers of swiss cheese, olives, and tomatoes, this salad recipe doesn’t rely on summer produce, so you can enjoy a crisp refreshing bite any time of the year. The real star of the show here is the homemade garlic vinaigrette.
Air Fryer Chicken Thighs
Winner, winner! It’s a super easy chicken dinner. Get that flavorful seasoned crispy skin in under 25 minutes with a little help from some homemade chicken seasoning, and your air fryer. We like to pair this one with a side of our sweet honey & thyme glazed carrots.
Smoked Salmon Sushi Bowls
Another spin on our Tuna Bowls from last month, this meal makes quick work of some salmon fillets in the oven broiler and is teeming with flavorful sauces and crisp textures. For me, sushi (and really any excuse to eat with chopsticks) is a welcome and whimsical experience. This bright meal is almost enough to trick your brain out of it’s wintry fog.
