Our kids wrapped up the last week of school this week in a predictable flurry of field days, lunch on the lawns, and ice cream fundraisers. Now, we settle into the untamed wilderness of summer and attempt to establish a routine that doesn’t involve six hours of screen time a day.
Whether you’re still wrapping up all the school things or finding a new summer rhythm, we see you, and we hope this collection of summer meals makes your week a little easier.

Monday: Grilled Salmon with Mango Salsa
Wrap salmon in a foil packet and you’ll never have dry salmon again! This is one of our favorite summer meals, and an easy one to scale up for company. Tip: Use frozen mango for easy prep.
Tuesday: Brie Cheese Sandwiches
Pack these sandwiches for a picnic or just enjoy them in the backyard. They’ve got the perfect balance of sweet and savory!
Wednesday: Bruschetta Chicken Bread Boats
This recipe was one of our earliest (could you tell by the blurry pictures?), but it remains a favorite. Toasted bread, cheesy chicken, and fresh tomatoes, basil, and balsamic. The summer vibes are off the charts with this one.
Thursday: Air Fryer Hot Dogs
In case the rain ruins your bonfire night, or you just need a 6 minute lunch, THIS is the way to make hot dogs! Just a few quick slices lets the air fryer work its magic and gives these dogs some more crispy crannies for holding more chili, cheese, or your favorite toppings.
Friday: Italian Bowtie Pasta Salad
Pasta salad is a staple of our summer eating. And it’s not just great at cookouts. We love to have a bowl made up for a fast and easy lunch or as a quick grab and go side dish (in case we get an impromptu patio invite).
