Crock Pot Enchilada Chicken
We like loaded baked potatoes, and one of our favorite toppings is this shredded and saucy enchilada chicken. The prep on this meal couldn’t be easier. Throw some whole chicken breasts, onion, and a few cans of green chilles and enchilada sauce in the slow cooker in the morning. When you’re about an hour out from dinner, throw a few whole potatoes in to bake at 425°F. Voila!
Cheesy Chicken Enchiladas
Since you’re going to have leftovers from Monday night anyways, why not give that chicken the meal that earned it a name with these cheesy enchiladas? This one is simple. Just assemble, top, bake. It’s all in one casserole dish and they taste amazing.
Tuna Sushi Bowls
Rice is fast and these days you can actually find some decent quality tuna from the grocery store. Let this be your excuse to skip the carryout and enjoy a
”sushi-esque” meal at home.

Oven Baked Grilled Cheese
Save this one for the Friday night when everyone is exhausted, no one is offering constructive input on dinner suggestions, or you’re hosting your kid’s friend(s) for a sleepover. The oven is our preferred way to make grilled cheese these days thanks to the perfectly toasted bread and ability to make a HUGE batch at once. Or cut these into tiny croutons and throw them into some slow cooker carrot soup!
