In December, we lean all the way into our most comforting savory meals. We fully embrace our sweet tooth. And we balance our indulgence with nourishing easy meals.

Monday: Crock Pot Barbacoa Tacos

Starting with a big batch of our shredded barbacoa beef is a great way to kick off a new month. You can make delicious tacos/burritos, and have plenty of leftovers for freezing, or for tomorrow nights dinner…

Tuesday: Mexican Beef Stew

Last night’s leftovers never tasted this good. This hearty veggie, beef and potato stew is packed with punchy Mexican-inspired flavors.

Wednesday: Italian Dressing Chicken

An EASY grilled chicken that you can make outdoors OR indoors in a flash with just a bottle of Italian dressing and some chicken breast. We love to serve this alongside some sheet pan roasted broccoli and cauliflower.

Thursday: Simple Pasta and Peas

A 30 minute meal that gets my kids to eat a green vegetable? Peas and thank you! Thanks to the familiar “shells and cheese” format and some cubed pancetta, this recipe has something that everyone can love.

Friday: Honey Garlic Pork Tenderloin

If you think that pork is reserved to overly salty, dried out broiled chops or shredded sandwiches, allow me to introduce you to the “filet mignon” of sweet juicy pork. We like to serve this tender masterpiece with a side of roasted sweet potatoes and goat cheese.
