Spring is springing and now that we are at the tail end of March, it feels like we can finally relax, stop clenching our collective tail ends, and lean in.
But before we naively roll out a week of all outdoor patio meals (it is afterall the rainy season) we’re hedging our bets with just one grilled meal that can easily be brought inside to the oven (if need be).
As for the rest of the menu, we’re sticking with a couple quick and easy family meals that should slot in nicely to a week where many of us are starting up spring sports practices and music rehersals.

30 min One Pot Ravioli Soup
Two things I know that my children will always eat is pasta and broth. That’s why frozen (or refrigerated) cheese ravioli has become a beloved shortcut ingredient for us. Even if these picky eaters pick around all the veggies and meat that adorn this wonderfuly comforting soup, I know that they’ll still get some protein and nutrients from the ravioli and broth. Win-win.
Roasted Veggie Pasta
If Monday’s ravioli soup was the comforting pasta you needed for a hearty dinner, then this is its lighter fresher cousin. A foil-lined sheet pan of veggies roasts in the oven while you boil some bowties. Then it all comes together at the end into a sweet and tangy Parmesan lemon sauce. This one makes awesome lunch leftovers.
Crunchy Chicken and Ranch Wraps
Fried ranch chicken wraps are a criminally underrated meal and IMO should be required to be on every fast food value menu. Thankfully red bag chicken, tortillas, and lettuce are pretty cheap, and this meal can be thrown together in a flash for a quick grab and go meal. (*Pro tip: the best ranch dressing is the bottle that you buy from Jet’s Pizza. I will die on this hill.) Grilled (*or baked) Tilapia Foil Packets
Trying to work more fish into your family dinners but can’t seem to find a recipe that everyone agrees on? This is the answer. This lemon dill tilapia with capers recipe is delicious as written. But we recommend you put out several options for herbs and veggies to let everyone customize their own tilapia foil packet meals. When they have a stake in choosing what goes in, they will be way more likely to eat and enjoy it.
Walking Tacos
It’s always a boon to my confidence when the kids tell me that their favorite meals come from their public school cafeteria. The joke’s on them this time, because in this case, I agree. Walking tacos is as simple as laying out a variety of travel chips, taco meat, and texi-mexi-meal fixins. While technically a portable meal, I wouldn’t dream of letting my kids eat one of these in our family car. But they’re great for just being outside and wandering around a park, festival, or backyard barbecue. They should really serve these at baseball games…
