September is a month of transitions, and I don’t just mean a return to school and some semblance of routine. The weather is hot then cold then hot again. We’re starting the mornings in sweatshirts and wishing we had chosen shorts by noon. I’m craving apple cake and hearty soup, but I’m also sweaty. It’s very confusing.
This month’s meal plan will reflect that transition, starting with a few recipes for the grill and some to use up the last of that late summer produce. By the end of the month, we’ll move towards cozier favorites like chili and apple dapple cake.

Now on to this week’s meals!!!
Monday: Caprese Panini
Crispy toasted edges, herby pesto and thick layers of tomato and mozz. It’s what all grilled cheeses want to be when they grow up.
Tuesday: Foil Packet Lemon & Dill Tilapia
This meal keeps coming back into the rotation, because it’s way to easy to include more fish in your diet when it’s this simple to cook and customize. We’ve been remixing the veggies we include and encourage experimentation.
Wednesday: Italian Dressing Chicken
A classic 2 ingredient quick weeknight meal that just works. We always make extra for salads, wraps, or chicken salad the next day. Hence…
Thursday: Cilantro Lime Chicken Salad
Our spin on chicken salad brings some Mexican inspired flavors into this meal rotation.
Friday: Hamburger Zucchini Casserole
Since zucchini plants are going ham right about now, we decided to give pasta a break this week and substitute zucchini into this rich tomatoey casserole.
