This month, we’ve been on the giving AND receiving end of Meal Trains. And I’m so glad that we saved all those leftover carryout containers, because this has been their moment to shine.
This week’s meals revolve around easy, big batch, shareable recipes, because that’s what has been top of mind around here lately. But even if (unlike us) your household/community is enjoying an injury/sickness-free October, these meals will still go a long way to saving you time. And that’s basically akin to self-care in my book.

Monday: Slow Cooker Shredded Beef
We start this week with an easy slow cooker meal that sets us up for a delicious dinner, and makes plenty to share or leaves leftovers that we’ll use for another meal later this week. This beef can be used to make dozens of different recipes from tacos, to stews, and we love it atop mashed potatoes or noodles.
