This Week's Meals: May 18 - 22
Dinner recipes and your grocery list are here.
We’re being reminded this week that despite our plans, and our desire to step into the next season seamlessly, that life often deals us curve balls, speed bumps, or just dump truck loads of trash.
Start again, stop again… one step forward, two steps back… feeling like we’ve got it made, then striking the chaos lottery…
Whether it’s illness, family, work, or the combination of everything all at once, we’re thinking of you all this week and hoping you are finding some calm amid the crescendo.
Here is your printable grocery list for all of this week’s meals!
Now on to this week’s recipes!
Monday: Creamy Sun Dried Tomato Chicken Pasta
This easy 30 minute meal is packed with enough flavor, that you’ll wonder if you really need to go to olive garden ever again… (Endless salad and bread sticks makes a compelling case though.)
Tuesday: Chicken Tortilla Soup
Developed as a tribute to our favorite defunct fast-casual dining spot, this Max & Erma’s copy cat tortilla soup is loaded with chicken, cheese, veggies, and has the perfect amount of spice.
Wednesday: Portobello Mushroom Sandwich
This is not a replacement for a beef burger. *whispers (it’s actually better!) This marinated portobello mushroom sandwich stands fully on its own with rich zesty flavors and a dynamite special sauce.
Thursday: Ground Beef and Potatoes Skillet
The sales pitch for this recipe is short: One pan, with everything you need, topped with cheese, ready in 30 minutes. These types of skillet casseroles are what built America.
Friday: Italian Bow Tie Pasta Salad
Why should pasta salad just be considered a side dish? We include enough ham/salami, veggies and cheese to make this a main course. In the summer, nothing is better than mixing up a bowl of this stuff in just 20 minutes, and having meals/lunches at the ready for days after.
