This month has held so much assembled joy, so much to be proud of and to celebrate… And yet behind this truly authentic smile, is an overwhelmed introvert who is grinding their molars and screaming on the inside.

Tuesday: Asian Chicken Marinade

Originally a copycat Panera recipe, this salad makes great use of leftover grilled chicken and give us an excuse to whip up some more of this delicious homemade sesame vinegar dressing.
Thursday: Margarita Shrimp Tostadas
Don’t sleep on tostada shells. This often overlooked tortilla-isle item has a CROuuNCH that is sooo satisfying. In this recipe, you can make your own by baking some corn tortillas or just buy the pre-made shells. I can’t think of anything better to top them with than refried beans, marinaded chili lime shrimp and fresh avocado.
Friday: Creamy Italian Sausage Pasta
Creamy, peppery and delicious, you’ll love how easily this 30 minute recipe puts a meal in your belly and a smile on your face.
