We’re in the midst of planning parties for our loved ones, so our email is a little late today, and I’m keeping things brief and to-the-point. My apologies.
At times like these, we find that a winning formula for meal planning is to follow the lunch-cafe model. One main protein that you can use in multiple meals + sandwich + soup + salad + a lighter option (like fish or seafood).

Monday: Ritz Cracker Meatloaf
We love my Mom’s Easy Meatloaf recipe, but just between us, we think we made it even better by including sauted onions and using crushed Ritz crackers in place of the breadcrumbs.
