Summer break needs to hurry on up and arrive already.

My patience is wearing thin, and thus my meal plan this week is simple and full of “expendables” (recipes that you can easily bump till the weekend, or slot into another weeknight later on if having cereal for dinner is helping you survive Maycember).

If your kids are anything like mine, they are now frequently ruining their dinners with end-of-year party snacks, gift bags, candy, fundraiser iced cream, or (in the case of my youngest), just plowing through a whole container of finally fresh seasonal strawberries in one sitting. *It’s ok Gus, we were gonna use those for a recipe, but we’re glad that at least you’re eating your fruit…

Anyways, do what you gotta do to run out the clock on this school year and get to the promised land. In the mean time, I hope at least a few of these recipes can bring you some nourishment along the way.

Monday: Creamy Sun-Dried Tomato Chicken Pasta

This meal is one of my favorites because it’s easy to make, and tastes like something you’d order at Olive Garden. (NAY, BETTER than OG!)
