Pack These Italian Chopped Subs for the Pool or the Ballpark!

Today is the last day of school for my kids, which, Hallelujah!, and also, WHAT?, and most importantly, HOW? How are they going to be in 5th and 2nd grade? How did we survive May? And how am I going to keep these hungry boys (and me!) fed all summer long?

I know the answer to at least one question and it’s chopped subs. A lot of them. At least once a week, maybe twice. We discovered the chopped sub last year when the idea went viral on social media. The premise is simple: take all the normal stuff you’d put into a sub, and instead of layering it, chop it all up into a bright and tangy salad, then pile it in your sub and go.

I can’t explain exactly why eating a chopped sub feels so superior to a regular old sub, but it definitely does. Every bite is crisp and meaty and punchy. It’s exactly the kind of thing I want to stuff in my face when I’m melting on the sidelines of my son’s baseball game or sitting by the pool with a book in hand.
