Two Asians and a Mexican walk into a diner… Don’t worry, it’s not a racist joke. It’s this week’s meal plan! (*sorry about the delay on this one, but it’s been a week)
Hope everyone had a wonderful Mother’s Day weekend and enjoyed the beautiful weather (either by choice or because of weekend kids sports).
This week our meals are (again) geared toward simplicity and getting dinner on the table FAST, because (let’s be honest) we’re all just running out the clock till summer vacation at this point.
Though we’re adding a little Asian and Mexican inspired flare, fear not! The hardest part of prepping these recipes is simply NOT burning the glaze (for tuesday night’s grilled chicken). Otherwise, easy-peasy.
Enjoy!
