Summer being in full swing has us soaking up rays, splashing in the pool, and eating outdoors as often as possible. It’s a wonderful time of year here in the Midwest.
And although the screen-time/summer boredom/kid-rot battle wages on, at least feeding them this time of year has gotten marginally simpler. Thank goodness for giant watermelons, fresh berries, peaches, and grilling weather.
This weeks meals are all about those fresh summertime ingredients and eating out on the patio.

Monday: Strawberry Spinach Salad
This simple salad highlights fresh in-season strawberries and tender spinach, all tossed in a sweet lemon vinegar drizzle. Topped with some toasted pecans for just the right nutty balance to all that sweetness.
