Jan Week 2 Meal Plan & Grocery List
There’s something soft and fuzzy about fresh snow. The way that everything outside feels still and quiet and clean.
Unfortunately this week, around us it’s been what we call “British cold.” Wet, grey, and windy. The kind of cold that isn’t cute and cozy, but makes your bones ache (*even when you’re inside). So, this week’s meals are simple and oriented around warming up!

Now on to this week’s meals!
Monday: Sweet Potato Turkey Chili
This 30 min chili has a great blend of sweet, smoky, and spicy flavors. Plus it can be made on the stove top, or in the slow cooker.
Tuesday: Sheet Pan Shrimp Tacos
Toss sliced/seasoned ingredients on pan. Bake for 12-ish minutes. Assemble into a tortilla. Dinner accomplished. These are very good topped with Avocado Lime Crema.
Wednesday: One Pot Creamy Mushroom Chicken & Rice
This is the ultimate comforting one pot meal. Herby chicken, tender rice, and creamy sauce make for a satisfying meal that feels like something your Granny would serve.
Thursday: Perfect Fluffy Buttermilk Pancakes
Breakfast for dinner (aka “Brinner”) is an often used get-out-of-jail-free card when we are tired of cooking and we can’t find a dinner idea that everyone agrees on. This is our take on the perfect pancake. These are VERY good topped with fruit and served alongside some Oven Bacon.
Friday: One Pot Orecchiette with Sausage & Broccoli
This 30 min one pot meal is a breeze. Sure, the kids will pick out MOST of the broccoli and sausage, but at least then it’s no worse than the mac and cheese they requested.
