Crock Pot Lemon Chicken Orzo Soup
Open for an easy spring dinner win!
Perhaps one of the most Midwestern things about me is that I believe the weather is a valid topic of conversation. This has been even more true these last few weeks, as we’ve swung wildly from warm sunny days to two inches of snow, then watched the wind rip trees out by their roots, and then, perhaps most bizarrely, ended an 80 degree day with an absolute pounding of hail and a dramatic thunderstorm, which then ushered in a 30 degree morning.
If that sentence felt like a lot to read, IMAGINE HOW WE FEEL. Spring keeps trying to enter, and winter just shoves a dresser against the door and says, “Not so fast, missy, try again next weekend.”
It makes sense, then, that our dinner plans each week have included both grilling burgers and making cauldrons of soup. This is March in Ohio, which is why I’m bringing you the springiest soup I could imagine, a Crock Pot Lemon Chicken Orzo Soup.
