Summer produce is peaking and I am so into it that without even trying, 4 out of 5 of this week’s meals contain tomato, avocado, or BOTH!
This is me sliding into my favorite fresh veggie season.
With all the great options right now, no one would blame you if you just swapped a family dinner for a nice melon that you found. (We just did.) But if you’re as enthused about the avocado and tomato season as we are, then give this week’s meal plan a try.

Monday: Avocado Burgers
One of our favorite ways to spin cheese burgers when the produce is this fresh. This burger has melty queso fresco, a thick slice of tomato, an herby citrus mayo, and sprouts piled with a juicy seasoned ground beef patty.
