Quick, Kid Approved Ground Beef + Lo Mein Stir Fry
Hallelujah, every single member of my family loved this.
Who here needs a quick, flavorful dinner that includes veggies, protein, and carbs AND everyone in the family will eat? I see those hands.
This Ground Beef Lo Mein is the meal I make when I don’t want to suffer fools at the dinner table. Maybe my kids can’t appreciate the wonders of Steak Gorgonzola Fettuccine or Mediterranean Stuffed Pork Tenderloin, but they can go to town on some saucy stir-fried noodles.
Let’s chat about this sauce for a minute. It’s savory, tangy, just a tad sweet, and a bit spicy (but only if you want it to be). I use hoisin sauce and unseasoned rice vinegar, plus ginger and sesame oil for a sauce that’s complex and crave-able.
I’ve loaded up this stir fry with carrots, broccoli, and sweet bell peppers, so you’ve got a complete meal in a single bowl. Of course, you can swap in other veggies if you want—I have some suggestions below.
