Food’s biggest holiday is on the horizon, and yet we still have to make dinner every night. It’s rude, I know. I’d like to be up to my ears in pie crust and pumpkin rolls, but instead my stomach demands regular ordinary sustenance. EVERY DAY. It’s exhausting.

If you’re struggling with what to make this month (besides crock pot mashed potatoes), I hope the collection of recipes below helps. I’ve included some ideas for dinners and lunches, as well as a few treats and things you might want to add to your Thanksgiving menu. A fair warning: there’s a lot of soup. What can I say? The heart wants what it wants.

Cinnamon Lattes

This is a homemade take on Starbucks’ Cinnamon Dulce latte, and I believe it’s even better than the chain favorite. You just can’t beat homemade cinnamon whipped cream.

Cottage Cheese Alfredo Sauce

Did you know you can make a rich and creamy Alfredo sauce with cottage cheese IN A BLENDER? Reader, I did not. This one totally surprised me. What surprised me even more is that my kids gobbled this up. It’s an easy 30 minute dinner that I feel great about, because, in case you haven’t heard, protein is good for you. Who knew?

Roasted Carrot Salad with Feta and Dill

I’m always grateful to have some greens on my plate this time of year, and this salad delivers without feeling too summery. The roasted carrots are the key here. Get them nice and honey sweet before adding to the greens.

Roasted Sweet Potatoes with Goat Cheese

Do I just love to roast root vegetables and add cheese? Yes. Yes, I do. This is a side dish worthy of Thanksgiving or a random Tuesday night. I like to pair it with a store bought rotisserie chicken for the easiest dinner.

Chicken Salad with Apples and Pecans

A perfect way to use up that leftover rotisserie chicken or leftover turkey, this salad feels more Autumnal than the standard fare.

Buttery Garlic Dinner Rolls

To be honest with you, my family almost never makes homemade rolls for Thanksgiving. It’s a lot of extra work, and Sister Shubert knows how to make a roll. BUT these Garlic Dinner Rolls are totally worth it. Even if you can’t make them for the big day, carve out a little time to make them for your family. I would say to invite a neighbor over to share, but you might find you want to hoard them all for yourself.

Turkey Pho

I find a bowl of this pho so impossibly lovely after a day of eating delicious but mostly beige foods. This brings heat and spice and fresh mint and cilantro and is just the perfect palate cleanser for the weekend after Thanksgiving.

Autumn Salad with Pears and Goat Cheese

Speaking of greens, how about a big bowl of them with thinly sliced pears, hunks of goat cheese, and pecans? The best part of this salad is the maple balsamic dressing, which you’ll want to keep around all season long.

Sausage, Sweet Potato, and Kale Soup

Get out of here butternut squash! This is the best fall soup. Creamy, hearty, packed with flavor and chocked full of sweet potato, which is superior to squash in every way.

Amish Baked Oatmeal

I know the weather is turning when I start craving baked oatmeal. This recipe is rich and hearty, and perfect with fresh berries, chopped apples, or nuts, and a drizzle of milk and maple syrup.

Fall Sangria

A refreshing spiced wine + apple cider sangria filled with fall fruits. Great for all your fall celebrations and gatherings.

Crock Pot Carrot Soup with Grilled Cheese Croutons

One of my sons LOVES this carrot soup. The other one tolerates it, because I serve it with a tray full of cheesy crunchy grilled cheese croutons for dipping. This is what winning at dinner looks like.

Biscoff Apple Trifle

Of all the apple desserts I’ve made (and I’ve made A LOT!), this one is my husband’s favorite. Something magical happens when the Biscoff cookies melt into the whipped cream and apples. It’s not quite cake and not quite pudding, but a secret, mystical third thing.

Pumpkin Pinwheels

This is my husband’s family’s recipe, and I recently re-tested it to make sure the instructions were foolproof. His family uses extra cream cheese filling, which makes these superior to all other pumpkin rolls, obviously.

Salted Maple Caramel Apple Tart with Pecans

If I had to pick just one apple dessert for Thanksgiving, it would be this one. It’s gorgeous, the crust is impossibly tender and buttery, and that maple caramel sauce is the stuff of my dreams.
